If you still don’t know the taste of “pyry z gziką” (potatoes with cottage cheese) or “kluchy na łachu” (dumplings) or “Miodówka Witosławska” (honey vodka) it is high time you visited the Leszno countryside.

Mushroom soup
Recipe by Longina Szulc from “Chata na skraju” tourist farm in Nowy Belęcin

• Meat and vegetable stock
• A handful of dried mushrooms
• 200 grams of frozen mushrooms
• 2 onions
• 2 spoonfuls of butter
• 2 carrots
• Mushroom stock cube
• Parsley

Prepare thick meat and vegetable stock (it is best to use loin of pork bones). Soak the dried mushrooms in water. Defrost the mushrooms that you use for dishes that require “fresh” mushrooms. The best method to make mushrooms taste fresh is to clean them after picking, put them into plastic bags and keep in the freezer. After defrosting, wash the mushrooms quickly and cut into pieces. Cut the onion into cubes and fry it with butter, add the soaked and fresh mushrooms and heat for a few moments. Add the mushroom stock cube to the meat and vegetable stock. Add the mushrooms, season with salt and pepper. Cut the carrot into cubes, chop the parsley. The soup can be served clear or with cream. It tastes excellent with home-made noodles.

Chicken in vegetables

• 4 chicken breasts
• 2 red peppers
• 1 can of sweet corn
• 1 small onion
• Cream
• Dill
• Oil, “vegeta” seasoning, salt, pepper, red paprika

Cut the chicken breasts across into strips and fry with oil, sprinkle with “vegeta” and pepper. Take them out and place in a bowl. Cut two red peppers into strips, fry them and then take them out and put in a bowl. Drain the sweet corn and fry in the pan, add chopped onion. Add the peppers and meat. Next, add cream and dill, season with red paprika. Serve with rice.
